He Also Chose

The other day I was reading a friends blog where she was discussing someone that she personally could not stand. She has voiced her opinion about this person many times before and I have to personally agree with her. This person has not made wise decisions, and personally it frustrates me. I have been thinking about this lately and as I sat in Sunday School yesterday, it hit me. He chose. He like me and the rest of us chose in the very beginning to accept that plan. He knew what was essential to the Fathers plan. Then that brought about the question of, "what changed?" What was it that made him who he is today, why is he rejecting the plan. Naturally I know that he "forgot" the plan, we all did. I guess I still don't understand what makes him think that what he is doing is right. With all of this in mind I feel a little less judgmental, BUT it in no way excuses the bad decisions that are constantly being made.

Sometimes even in the church I have disagreements with others. I in no way hate the person mainly cause I don't hate anyone, I just don't agree with you. Chances are that you don't agree with me either and that is ok. Sometime I find that I forget that you also chose, we were/are on the same side. That like me you are a chosen son/daughter of God, however it still doesn't mean that I agree with you. It just means that I am more tolerant, and may or may not give you more of the benefit of the doubt.

The point is I guess, that we are all entitled to our own opinion (A fact that I love and am trying to use more of). No one has to agree with us, but we do need to remember that even though we can't stand certain people they are still children of our God. They need to be treated with respect, even if we feel like they don't deserve it. They chose the plan too!

Brett's Puppy

We have this mean nasty dog that lives next to us, every time we go to the car the dog runs at us barking and snaps his chain. Argh, I hate it cause it scares Brett and I to death. However Brett can't stop talking about the "puppy."

While on Christmas Break, we were able to spend some time with Sable(Neanea's dog) and eventually after a week, Brett warmed up to her and actually started to love her. Since being home he is more excited about the puppy out side, but for some reason he still will not pet any other dog.

He keeps asking about the puppy everyday, and so since we are not allowed to have pets, I had to come up with a way for him to have a puppy. So here are some pictures of a boy and his puppy, which he loves and adores. (Also take note of the family picture on the left, puppy made it into the family photo. It was the only way he would hold still!)

Pregnancy Update!

The results are in and the MRI showed that everything is normal. I am still in tons of pain, but I guess that is going to be a part of life for the next little bit. My glucose test also came back and I am at no possible risk for gestational diabetes. Which makes me very happy, for some reason I always worry about that.

As far as her growth goes, she is almost 15inches long and weighs 2 1/4 pounds. She is gaining weight like crazy and should start to see in a little bit.

Our sissy is a mover, for which I am grateful. Except on the nights that I do get a wink of sleep. Brett loves to kiss my belly( I bet he kisses his sister about a dozen times in a day), he is sure that sissy in included in goodnight kisses. He loves to talk to her and occasionally poke her. No doubt that their bond is already growing. He is such a sweet little boy.

I feel tired most of the time, but I really can't complain. I have a lot of support from a little boy and his dad. They work hard to make sure that I get the rest that I need. I have a lot to be grateful for.

You Have Got To Be Kidding Me!!

Ok so I think that these last two post are from my soap box, but I think that they have some importance. I am going to let Glenn Beck explain the situation and I will add my two sense at the end.

Glenn Beck:
We mentioned it last week. Nobody in America is upset about this. You remember last week we told you that Barack Obama, when Gordon Brown came into town, he decided that he wasn't going to have a press conference. He also decided that there wouldn't be any British flags in the press conference, when they met, there wouldn't be a British flag. What are you even thinking? So there's no British flags. They met in the oval office. This set, the diplomatic core for the English back, the press corps and they didn't know what to do. They didn't know how to spend this. What does that mean? And Barack Obama just said, I'm not going to have a joint press conference. Well, you don't do that. I mean, I've seen him with the president-elect Iceland. Hello, it's Great Britain, our greatest ally. But then he also gave a gift. He gave a gift of a bunch of videos. Well, okay. That's usually not what the president gives. Usually it is a gift to the head of state of something of significance, something of real importance, something that signifies how deep our friendship goes and also says something about our country and our resources and, you know, our heritage. To me it's appropriate that Barack Obama, when he looks to what could be a statement gift that I can give the leader of our greatest ally, what is something that says everything you need to know about America, he goes and gets a bunch of DVDs from movies that we've made. I mean, it's -- and he didn't even get the movies that they can watch over in England. It's not the same technology. So all of the movies that Gordon Brown was given as a gift from our president he can't even watch. And what did we receive as a gift? Barack Obama was given a pen made from the wood of the HMS Resolute. The Resolute was one of their big warships and it went -- these two ships went up and they were going up into I think it was the Arctic Circle, I'm not sure. They went up to the Arctic Circle. The Resolute gets stuck in the ice. So does the other one, but the Resolute never gets out, and the captain of the Resolute says, "Get out of the ship, get onto the other one; we're going home." When he gets home, he's court-martialed because he's left the HMS Resolute, a perfectly good ship, and he abandoned. And so he is court-martialed for it. Well, eventually the ice breaks and America goes up and we pull that thing out of the ice and we sail it over to England and we return her in, like, 1850 something or other as a gift. Well, the Resolute is in service for England and, you know, it signifies our gift to England and we say, please forgive us for everything that we've gone through in the past 50, 75 years. We are brothers. The Resolute is a big deal. So when the Resolute is decommissioned, Queen Elizabeth decides, I'm going to take the wood and I'm going to make two desks. I'm going to make one for me and one for the president. This is as significant as France giving us the Statue of Liberty. So she takes this and she makes it into two desks. It's the desk that -- remember little JFK, Jr., he opens up the trap door and he looks, you know, through it? That's the USS Resolute desk. There's only two of them: One with the queen, one with us. FDR put that door there. This is such a historic desk. He put that door there so it would hide his wheelchair so nobody could see his wheelchair. The door is the only place where the seal has the eagle looking down at the arrows instead of the olive branches, okay?
So what does Gordon Brown do? He comes to meet with the president and he gives him a set of pens made from the wood of the USS Resolute to match the desk that should be in a museum. He gives him a matching set of pens. Barack Obama hands him a basket -- I'm not kidding you, hands him a basket of DVDs that he can't play. Mrs. Brown has children's clothing from, like, the best designer in England, you know, all fit the kids. Michelle Obama goes downstairs, grabs a couple of boxes of Marine One helicopter models and gives them to Mrs. Brown: "Here, this is for you." As bad as this is -- because what this shows is either the disdain of the Obamas for England, and I don't know which one's worse, the disdain of England from the Obamas, and you should see -- Michelle Obama, what she has written about England, you know, they were just, they were the linchpin of the slave trade. She has real disdain for them, at least she did when she wrote her term paper. It may be just that, that she hates white England. I'm not sure. But let's give her the benefit of the doubt and let's say they don't hate England. It shows the arrogance. We have people in the State Department, this is all they do is come up with gifts. The arrogance of this administration. They are obviously not listening to the State Department on something this important as a gift. And the worst part of it is the bust of Winston Churchill, there are two of these. England's working in twos: The HMS Resolute desk and the bust of Winston Churchill. This is the most famous bust of Winston Churchill. England gave this bust to the president for the White House right after 9/11 as a sign of standing together: We will stand together united as one. They gave us this historic bust of Churchill. It has been sitting in the oval office since 9/11. Barack Obama says we're going to box this back up and you guys can take it home with you. Gordon Brown says, "No, no, no. Mr. President, that was a gift from the people of England after 9/11. If you want to keep that in one of your museums, you may keep it in one of your museums but please, no, no, that was a gift. That wasn't to borrow. We didn't just lend that out to you. That's a gift from us." He said, "No, that's okay. We don't want it." And he's sending the bust of Winston Churchill back to England. The people of England are going crazy and they're going crazy because our press hasn't even reported on this. What is this guy doing? What is he doing?

First of All, I think that somehow, Obama was not let in on the protocol of having a Head of State come. No Joint Press conference?? What? Ok, fine I could possibly see that, but what about the gifts that were given? DVD's and toy helicopters, seriously?! What I want to know is, what do they have to say about sending back the bust of Winston Churchill?? I'll tell you what I have to say, that was a gift to the U.S. not something Obama inherited from President Bush. That bust belongs in a museam, and it belongs to us. Honestly I am kind of speechless, by the arrogance of this administration. How could you do that to our greatest ally?

Good Bye, Tom Hanks!

I wasn't going to say anything about the 'Big Love' controversy, for several reasons. 1) I think that the church did a good job at their response, and pretty much told me to let it go. 2) I don't want to make a comment and sound complete unintelligent, or to start a fight. 3) The church has always thrived during persecution, so why mess with it(maybe we will reach 14 million members by the end of the year). 4) I am way to busy to deal with it, and let the anger fester in me. 5) Doctrine and Covenants 6:34 Therefore, fear not, little flock; do good; let earth and hell combine against you, for if ye are built upon my rock, they cannot prevail.

Now with all that being said, I was watching Glen Back the other day. Which by the way if you don't watch him, you should. I don't always agree with what he says, but he is pretty much right all the time. Anyway I was watching Glen and he had on his show some religious leaders and a professor of the constitution(ah, something like that), from somewhere on there. They were discussing a little problem with the state of Connecticut, and how the state wanted to take control of the Catholic church. Well we all see the problem with that. But the Catholic leader was pointing out that, he felt that this came about because they were in favor of Prop 8. Everyone on the show agreed and then they started to talk about the Mormons and all the junk that has happened to the church. Anyway, when it went to commercial, I was thinking about all of the stuff that had been said and the upcoming show of 'Big Love', and I said to Jon, "I wonder if that show is a retaliation?" Jon shrugged his shoulders and replied, "Maybe."

Which leads me to today, I was reading a friends blog and she had made reference to Tom Hanks, being the executive producer of 'Big Love', and I thought back to a statement that he made a little while ago which you can read here. I thought, "Ah this is retaliation!"

So since I have the basic cable package, which doesn't include HBO. I tell you this, I will not own a movie with Tom Hanks in it or produced by him(or his wife). I realize that cuts out a lot of good movies, ie: Toy Story, Sleepless in Seattle and You've got mail. Just to name a few, but I am ok with not rewarding his bad behavior.

To Tom Hanks I say: Go ahead with your stupid show, we are build upon the rock, you cannot prevail! Oh and I hate to break it to you Tom, the Church didn't donate millions of dollars to push through Prop 8, the members did and we didn't donate it to the church but to those working to push it through. Just so ya know!!

Midterm Results

I was able to log on to my BYUI account and get my midterm grade. I was a little disappointed when I saw that I got a 75 out of 150. I knew that I wouldn't do that well, so I expected it but I was still disappointed and even questioned finishing the class/program.

The midterm however didn;t just consist of a test, but four formal essays. The grade for said essays still had not been posted, so I logged on yesterday to see my score and I had several emails from my professor. One of the emails said that he posted the wrong grades. I quickly checked my grades and instead of 75 out of 150, I got 75 out of 100. Ok I'll admit still not the greatest score, but way better. My essays I got 97 out of 100!

Those scores made my day and motivated me to better. Maybe I still have a brain after all, I was starting to wonder!

Cafe Rio Salad

Alright I made my salad, and it was AMAZING!! It was so good, I am still eating leftovers! I spent 5 hours making it and the recipes that I had made so much. Although the recipes were not exactly the same as the original, it was close enough to the real deal for me(and I love my Cafe Rio). I am going to post my recipes, with a few modifications, so that others can enjoy them. If anyone has any questions feel free to comment or email me(email address is on the right).

Cafe Rio Chicken Salad

Dressing:
1 pkt buttermilk ranch dressing (make as directed) or 3/4 bottle prepared dressing
2 tomatillos
1/2 bunch cilantro (I bought a huge bunch of cilantro, and a 1/2 bunch was too over powering, make sure you cilantro bunch isn't too big)
1 clove of garlic (I used extra garlic in everything that called for garlic)
juice of 1 lime (2 T)
(I added a touch of the chile juice)
Blend everything together in a food processor(I used a hand blender and it worked perfect).

Chicken:
1 small bottle zetsy Italian dressing(apx. 8oz)
1 T chili powder
1 T cumin
3 cloves of garlic
5 lbs chicken

Add everything in a crockpot (on high)and cook for 4 hours. Shred chicken and then cook 1 more hour.

Rice:
3 cups water
4 tsp chicken boullion
4 tsp minced garlic
1/2 bunch cilantro
1 can green chiles
1/4 tsp salt
1 T butter
1/2 onion
3 cups minute rice (or 1 1/4 cups regular)(I used 1 1/2 C regular rice, worked great. watch it close though, you don't want mush)
Blend cilantro, onions, garlic and chiles in a food processor. Boil water, add all ingredients. Simmer for 30 minutes, stirring occasionally.

We made our own tortillas, which I think adds to the taste. Jon had this recipe from his BYU cooking class and they were yummy!

Homemade Flour Tortillas
4 C. flour 1 C. warm water
1 ½ tsp. baking powder 1/3 C. milk
1 Tbsp. salt 1/2 C. shortening
1. Mix dry ingredients in mixer.
2. Mix milk and water, and heat to just below boiling.
3. Add milk/water mixture and shortening to flour mixture and knead to a soft dough.
4. Break into 20-24 balls. Let rest 10 minutes or more.
5. Slightly flatten each ball with the palm of your hands. Roll out with almost no flour on the board, but with flour on the roller. If you have a tortilla press, you may use that.
7. Tortilla: Cook on hot griddle or electric fry pan (about 375° F). Use a towel or large turner to press down and turn, repeating until the side is done. Turn and cook the other side the same way. The tortilla should be white, not browned.


To make Salad:
Layer:
A tortilla (melt cheese on top)
chicken
rice
dressing
beans
salad greens
pico de gallo(tomato, onion, cilantro, garlic, and jalapenos)(make it chunky)
Parmesan cheese
Cilantro

Hope everyone who tries it enjoys it as much as I did. Be aware that this recipe make alot, especially the dressing!

Pregnancy Update!!


Well we have good news and not so great news. Lets get the not so great news out of the way.

I went to the Doctors yesterday and we were talking about the pain in my lower back. After telling him how excruciating and sometime debilitating it was, and that I was not sleeping at all. He then asked if I was experiencing certain symptoms and I confirmed that I had experienced 4 of the 5 that he had mentioned. He then told me that we needed to order an MRI. The doctors said that he was ordering it only for precautionary reason, and his main reason is that he is worried that baby could be sitting on my spine. If she is sitting on my spinal, she could be causing irreversible damage(such as being paralyzed). So catching it sooner then later would be a good thing. He did say that he doubted that she was sitting on my spine, but that it is a possibility that he wants to rule out soon. I go in for the MRI at 12:20 AM(yep not a typo, I guess they do MRIs around the clock here) on wednesday. I go back to the doctor on the 19th to talk options. If she is infact sitting on my spine I will have to go see a nuro or othopedic surgeon. I have not the slightest idea what they would do, so I am kind of in the dark on that one.

Sometimes I feel like if it isn't one thing then, its another. Oh well.

Good news is that we are rapidly gaining weight. Baby's heart rate is in the 140 range. She has been kicking me like crazy, which can account for a little of the sleeplessness(thank goodness for naptime). I doubt that I get 20 minutes to myself when she isn't kicking, I bet that is why I am in so much pain. Baby is almost two pounds and measures roughly 14 inches. She can start to hear now, which I completely believe. When she hears Brett in the Morning, she must get so excited cause that is when she kicks the most and the hardest. I think the two will be fast friends. I did the glucose test, which I neither hate nor love. Honestly though it really isn't as bad as some people make it out to be. However it does leave you feel sluggish with a little headache. I have yet to find out the results. 97 days to go!!

On to even better news, the weather was 68 with a slight breeze. It has been a super georgeous day and I am anticipating the arrival of spring. We went to the park today, and brett had a blast on the slide. I was going to take my camera, but decided against it. Dang it I missed a lot of fun and laughter. I will take it next time!!

Once There Was a Snowman.... But in the Sun He Melted!

Mom and Dad Wierschke came up to visit two weeks ago, and they kindly watched Brett(I am sure they hated every minute of it ;)) while Jon and I went on a much needed Temple trip. While we were gone Grandpa and Brett made a little snowman. Sadly by the time we got home and got a picture of it, our poor snowman looked like this. Since I had Midterms last week, we decided that Mom and Dad could watch Brett while I focused on school(good excuse, huh) Really that was the intent, but I had so much fun that I wasn't able to focus much. Anyway Saturday night we were hit with a huge snow storm and we got about a foot of snow. So I encouraged the boys to go out and build a snowman( you can see the snowman's progress on the slide show). Brett had a blast, despite the frigid weather and they guys built a TALL snowman. Minus the little details(ie eyes, arms, mouth)he was a pretty cool snowman. On Sunday, as we were chatting I inquired about our giant friend. The news was devastating, in a few short days our snowman had turned into this

Much Needed Break

First of all, I took a week off of blogging. Ok lets be honest, I took a week off from EVERYTHING!! I am sure that I will regret that decision later, but I sure needed it. My one (yeah pathetic, I know) midterm was a killer. Why am I complaining, my sad lame midterm is nothing compared to Jon's regular homework. Anyway it is all water under the bridge and I start fresh(well at least I start)tomorrow.

The week was pretty uneventful and very cold!! That was a lie, now that I think about it. We got home on Wednesday from mom and dads(I wanted to take dinner to a sister in the ward, or I wouldn't have come back). Thursday we had some non member friends over, they are from Brazil and they were a blast to hang out with. Friday and Saturday, I did nothing but laundry and I waited until 8pm to even start it. Today however was a little more eventful then I would have liked it( only one little thing happened, the one thing I have been dreading for a while now). After church while I was getting dinner ready, Jon was changing Brett into clothes that would fair ok after he got spaghetti all over himself. Jon dresses Brett in a long sleeve shirt and a pair of overalls. Brett has had this thing lately with his diaper, he just hates having it on and so he will dig at it. SO I started putting him in onesies and I pin his zipper closed at night, to prevent his hand from going down his pants. Well in the process of making dinner I notice his hand down his pants and I stop him. We eat dinner, he makes a few grunting noises, I smell him, and we are off to get back up(Brett likes to fight us, during diaper changes). Dad was in the computer room, I am on speakerphone with mom and dad wierschke. Brett runs in to get dad, we head into Brett's room. The phone starts to die, so I head back into the computer room to change phones, notice something weird on the floor. I bend down to get a closer look, and sure enough Brett had pooped on my floor. I just about died. Come to find out Brett had pooped and peed in his pants and it was everywhere. I am just grateful that nothing was ground into the carpet. Mom and Dad sure had a good laugh though.

We did take a new family picture, it is posted to the right. Sorry there isn't even a glimpse of my belly. I assure you though, people at church today said that I had nothing to show off :(, I guess I always look pregnant. Just kidding I know they meant it with kindness, I just notice my bump more, I am ok with that. The family picture isn't our favorite, but it was the best that I could come up with. I just need to pay someone to do a better job, I am so cheap! I also finally updated the slide show for those who watch it, sorry it has taken me forever.

Pregnancy update:

Nothing much has changed since last week, except for the fact that I got less sleep. I am craving mexican, which for me is nothing new. I ate at Cafe Rio alot while I was pregnant with Brett. Sadly there is nothing like Cafe Rio here, anyone want to over night me a chicken salad? Honestly the craving is so bad that during my nap time today I couldn't fall asleep cause I was too busy trying to figure out how to make that darn salad! Never fear I have a recipe, so I am going to try it soon!! I head to the Dr's this week so we will see how much weight I have gained. If I can master this salad recipe I am going to gain a TON of weight. The glucose test is coming up, which I don't mind either. I have my orange drink I just need to drink it and let the vampires(that is what my grandpa always called them) have at me.
